Hemicellulase (Xylanase)

A dough conditioner that works on the arabinoxylan fibers of flour — for extensible, machinable dough, superior gas retention and a finer crumb.

Livzym Hemicellulase is a food-grade xylanase produced through microbial fermentation. It hydrolyzes the β-xylosidic bonds of the arabinoxylan fibers naturally present in cereal flours, both refined and whole grain — the non-starch polysaccharides (NSPs) of baking flour — and is added in bread making to improve dough machinability, manageability and stability, bread quality and loaf volume.

Mode of action

Arabinoxylan is a chain of xylose units carrying arabinose side groups. Hemicellulase — an endo-β-(1,4)-D-xylanase — cuts that backbone at points along the chain, turning the long fibers into smaller arabinoxylan fragments. The smaller fragments bind far less water, so more of it becomes available to the gluten, and the fibers no longer get in the way of the gluten network.

Smaller fragments hold less water and interfere less with the gluten — the dough becomes more extensible and stable.

Features & benefits

Starting to work directly in mixing, Xylanase helps obtain the following characteristics in dough and bread.

  • Extensible dough, better pan flowHigher dough extensibility and increased pan flow.
  • Machinability and gas retentionIncreased dough machinability and superior gas retention for optimum oven spring and product volume.
  • A stronger gluten networkStronger and more continuous gluten network to minimize gas bubble coalescence.
  • A finer, more even crumbFiner and more even gas cell structure in the crumb.
